LEMON COCONUT ENERGY BALLS

Do you need a pick-me-up? Try making these Lemon Coconut Energy Balls to fuel your day.

Did we mention they only take 10 minutes?

INGREDIENTS:
  • 1 cup pitted dates
  • 1 cup cashews
  • 1 cup unsweetened shredded coconut
  • ¼ cup chia seeds
  • Zest from 1 lemon
  • Juice from ½ lemon
INSTRUCTIONS:
  1. Add dates to food processor until broken up into small pieces
  2. Add cashews, ½ cup of shredded coconut & chia seeds until combined
  3. Add lemon zest and juice for an additional minute
  4. Roll into 18 balls
  5. Roll the balls into the remaining shredded coconut
  6. Freeze for 15 minutes and then store in fridge
