LEMON COCONUT ENERGY BALLS

Do you need a pick-me-up? Try making these Lemon Coconut Energy Balls to fuel your day.
Did we mention they only take 10 minutes?
INGREDIENTS:
- 1 cup pitted dates
- 1 cup cashews
- 1 cup unsweetened shredded coconut
- ¼ cup chia seeds
- Zest from 1 lemon
- Juice from ½ lemon
INSTRUCTIONS:
- Add dates to food processor until broken up into small pieces
- Add cashews, ½ cup of shredded coconut & chia seeds until combined
- Add lemon zest and juice for an additional minute
- Roll into 18 balls
- Roll the balls into the remaining shredded coconut
- Freeze for 15 minutes and then store in fridge
